"Eperon" is the French word for "spur", and we definitely did not hold our horses when tasting this wine. Which is a pity, because it's actually even better the next day. If you ever forget it in a carafe overnight, we'll call that a happy accident.
I'm a nerd, I want every detail
We've talked about Pech Redon before (see L'Epervier). With L'Eperon, the estate offers another great example of its remarkable ability to translate a terroir into something simply delicious. This wine is 100% Carignan, a grape variety that was once forgotten, but whose notes of blackberry, licorice, and pepper found a warm welcome at Pech Redon. The result is extraordinary. Do open it in advance, please, to experience its full potential.

The occasion
This is a tannic but light red, perfect for apéritif. We like it chilled with parmesan crackers, a charcuterie platter, and very good sourdough bread. Happiness in a bottle.
Christophe Bousquet
Christophe Bousquet is a 3rd generation winegrower. His father wasn't making his own wine, but he had a deep and wide culture of wines which he shared with Christophe early on. In fact, wine was practically the only topic of conversation at the family dinner table. While discussing with prestigious winemakers, Christophe's father warms up to the idea of making his own wine. So they start looking for a vineyard with great potential and they soon focus on the La Clape plateau. Meanwhile Christophe deepens his knowledge in winemaking by getting an advanced diploma in œnology.
In 1987, the then owner of Domaine Pech Redon is in poor health and the Bousquet family's passion convinces him to sell his property to them. Winemaking is entrusted to Christophe for whom the time has come to apply what he studied so obsessively. He decides to do it in the most personal way he can. And it's an immediate success. His very first vintage receives critical acclaim and makes his father proud. Domaine Pech Redon has been his life project ever since - he has put the La Clape appellation on the map on an international level.
