“Septentrion” is an old French word for “North”. We’re indeed headed to the North of France, where this wine was crafted contrary to all our expectations. We expected fruitiness, but it’s dry. We expected Riesling, but it’s a blend of other grapes. Oh well, it’s delicious anyway.

Septentrion is a wine like a mosaic, in the best possible sense. Regional grapes from Alsace (Müller-Thurgau, Pinot Gris, and Auxerrois) undergo a malolactic fermentation, much like the approach used in Burgundy. Septentrion develops buttery, brioche-like notes, with an added complexity through oak barrel aging. It made us scratch our heads — "where does this wine UFO come from?" — and the answer made us audibly gasp. You are definitely in for a surprise. 

 

The craft

 

  • Spontaneous fermentation.

  • Low temperature.

  • 12-month oak barrel aging with stirring.

  • 12,5% ABV.

  • Lifespan: up to 6 years.

 

The occasion

 

We love this wine with an autumn dinner: white fish with a cream sauce, or chanterelles and chestnuts. Throw in a soft-boiled egg as well: it will taste like a king’s feast.

 

The winemaker

Norbert Molozay

Before focusing exclusively on Château de Vaux, Norbert Molozay used to be a "flying winemaker", applying his skills and experience from one vineyard to another in New Zealand, Australia, the US, but also closer to home in Burgundy, Beaujolais, Alsace and Languedoc. Needless to say, he acquired an unperalleled experience. Norbert's wife, Marie-Geneviève, first studied sciences but was quickly drawn to œnologie. After all, it was an unsurmontable challenge for her to be the first family member in 5 generations of wine merchants from Metz to move away from wines.

En 1999, Norbert and Marie-Geneviève took over at Château de Vaux with the firm convition that the unique combination of terroirs, exposure and grape verieties could yield exceptional results. They were proven right a few years later and now Château de Vaux is unquestionably the premier wine producer in French Moselle, recognized throughout France.
