Tasting notes

Shaped by Mediterranean red soils over limestone, this Grenache Blanc–Macabeu blend reflects the Roussillon sun with quiet elegance. Pale gold with green highlights, it shows pear, acacia, vanilla, and fresh butter. The palate is fine and ample, with white fruit, light cream, and a clean, fresh finish — a southern white that marries richness and restraint.<br><br><b> The Craft<br><br></b> - 80% Grenache Blanc, 20% Macabeu. - Hand-harvested, sorted in the vineyard, destemmed. - Cold settling; fermentation at 18°C in stainless steel. - Aged 3 months on fine lees in oak with regular bâtonnage. - 13% ABV; <1 g/L residual sugar. - Production: 5000 bottles. - Average vine age: 40 years.<br><br><b> The Occasion<br><br></b> Ideal with fish dishes, monkfish, saffron scallops, dry goat cheese, and grilled seafood — any table that calls for a touch of Mediterranean lift.

The Boudau family has tended this land for over a century, yet for Pierre, Véronique, and Géraldine, winemaking is a return to their roots — a way to honor the Roussillon and its traditional cépages.

Pierre and his sister Véronique took over the estate thirty years ago. Pierre now guides the organic vineyards, guided by a conviction that agriculture must protect the land it depends on.

Véronique brings discipline and experience to the cellar, shaping the style of the wines. Géraldine, Pierre’s niece, left the corporate world in 2020 to join the estate. She vinifies each cépage and each parcel separately to capture the essence of every vintage.

Here, nothing is systematic. Each step is carried out with rigor and attention, and a quiet devotion to the Roussillon landscape.
