AOP Côtes du Roussillon

Shaped by Mediterranean red soils over limestone, this Grenache Blanc–Macabeu blend reflects the Roussillon sun with quiet elegance. Pale gold with green highlights, it shows pear, acacia, vanilla, and fresh butter. The palate is fine and ample, with white fruit, light cream, and a clean, fresh finish — a southern white that marries richness and restraint.

The Craft

- 80% Grenache Blanc, 20% Macabeu.
- Hand-harvested, sorted in the vineyard, destemmed.
- Cold settling; fermentation at 18°C in stainless steel.
- Aged 3 months on fine lees in oak with regular bâtonnage.
- 13% ABV; <1 g/L residual sugar.
- Production: 5000 bottles.
- Average vine age: 40 years.

The Occasion

Ideal with fish dishes, monkfish, saffron scallops, dry goat cheese, and grilled seafood — any table that calls for a touch of Mediterranean lift.
