Tasting notes

From old Chardonnay vines rooted in clay, limestone, and marl, Les Longues Terres shows the depth of southern Burgundy. Pale gold and clear, it opens with acacia, honeysuckle, vanilla, and a hint of toasted oak. The palate balances richness and freshness, carried by stone fruit and a long apricot finish. A Mâcon-Loché shaped by patience and legacy.<br><br><b> The Craft<br><br></b> - Old-vine Chardonnay (~30 years) — Certified organic. - Hand-harvested at full maturity. - Whole-cluster pneumatic pressing; two static settlings. - Fermented in French oak barrels; slow fermentation through spring. - Aged 11 months in barrel.

Auxence Couturier

Domaine Couturier is led by legendary Marcel Couturier, a vigneron shaped by generations of farmers in the southern Mâconnais. Since his first harvest in 2005, he has built the domaine parcel by parcel, working with old family Chardonnay vines. He is now joined by his daughter Cladie, who oversees the cellar, and his son Auxence, who joined the estate in 2018.

Auxence is deeply passionate about organic and biodynamic farming practices. Like his father, he is a complete non-interventionist. The estate now creates homemade biodynamic compost, applying it to a third of the soil each season, along with regular ploughing. Harvesting is done by hand, with grapes carefully sorted to remove underripe fruit. The grapes are gently pressed in whole bunches using a pneumatic machine, followed by two rounds of static settling before being transferred to oak barrels deep in his cold cellar in Loché for fermentation utilizing spontaneous, native yeast. Once the wines are in barrel, they are basically left alone from that point, without racking or bâtonnage, until they are bottled.
