The Syrah (65%) and Mourvèdre (35%) grapes used to make this blend come from an almost untamed, gravelly plot nestled at the foot of the hills, not far from an olive grove that gave the wine its name. It is an enchanting vintage that captures both the ruggedness of nature and the tenderness of a winemaker whose favourite word is yes. Yes to the hard limestone, the red-blooded clay, the high winds. Yes to the beauty they bring to his wines. 

 

The craft

 

  • Hand-harvested.

  • Destemmed grapes.

  • 20-day maceration, separately for each varietal.

  • 1-year aging in oak barrels after blending.

  • 14.5% ABV.

  • Lifespan: up to 8 years.

 

The occasion

 

This pairs well with oven-roasted mutton or beef and all grilled meats cooked with herbes de Provence.

The winemaker

Rémi Vandôme

Rémi is a calm and intensely focused person, but he does not like to talk about himself. He'd rather promote the artists who design his labels and the musicians who come to the domaine for concerts open to the public during summer evenings. Yet, when he talks about the domaine that he purchased with his brother over 20 years ago, his deep love for this corner of garrigue near Saint Clément is inspiring. The soils are a combination of red clay and limestone gravel which drain well - a perfect foundation to produce high quality wines. He converted the entire domaine to organic agriculture 15 years ago in pursuit of purity and elegance.  His quests is bearing beautiful fruits, he seems to have found a peace of mind in the calm and magnificient environment that he has preserved and developed.
