Chardox is like a collab between Chopin and Kings of Leon. Bear with us; we promise this metaphor is going somewhere: Burgundy grapes were vinified in Tarn, a region with a completely different identity. Could have been a disaster. Turns out it's one of the best Chardonnays we've ever had.

I'm a nerd, I want every detail

Winemakers Jeanne and Philippe (aka Fifi, founder of Ten Bells wine bar in NYC) were born in Burgundy. Their winery is located in the Tarn region, further south, but they couldn't resist making a Burgundian cuvée. They sourced superb Chardonnay grapes grown on 35-year-old vines from a friend, and went to work. The result is a wine with tension and rich buttery notes. We're confident in saying this is as delicious as it is impossible to replicate. 

 

The craft

  • 10-month aging, 50% in steel vats and 50% in oak barrels.

The winemaker

Jeanne et Fifi

In 2022, Jeanne and Philippe “Fifi” Essomme (their real names) created their estate in Mont-Roc, a small village in the Tarn perched at an altitude of 600 m in the Montagne Noire at the gates of the Natural Park of the Haut Languedoc.

Jeanne et Fifi are young winemakers, but their wine adventures began a long time ago. Their common Burgundian origins may have something to do with it. Fifi, who lived in New York for 21 years, opened "The Ten Bells" in 2008, the first natural wine bar in the city - a true pioneer. Then, he went on to open a wine shop in Brooklyn and finally develop a French wine import portfolio for the whole of the US. From an early age, Jeanne was exposed to her family and friends making wine in the barns of Burgundy. During her adolescence, la vendange became an annual ritual. As soon as they met, Jeanne and Fifi embarked on trips to Europe together to visit winegrowers and survey vineyards. In 2021, they decided to move back to France, where they found a location where their dream of making wine in their own distictive way could come true.

In true Fifi fashion, this is an perillous adventure. They’ve been planting varieties long lost to an area entirely dedicated to the Roquefort appellation - the legendary blue cheese. Here the sheep rule. And they have their own sheep, which contribute to growing the best possible grapes biodynamically. They've planted a massal selection of Chenin Blanc, Pineaud'Aunis, Fer Servadou and Bouysselet. While waiting for these vines to mature, they are making their first wines with grapes that they purchase from friendly bio producers.  They may have to continue doing so regardless because some of their first attempts are addictive.
