"Canon" is a slang word for "stunner" in French — which made us laugh when we pulled the bottle out of its black sleeve after the tasting, because it kind of is. Dry, fresh, with just the right amount of bitterness. This wine is definitely in its party era.

I'm a nerd, I want every detail

This might be the most "natural" of all our wines, meaning the vinification is about as minimalist as it gets. Direct pressing, a few hours of maceration, and voilà: bottled without any filtration, which preserves its lovely pale straw colour and fresh floral aromas, with no residual sugar. It's not necessarily an easy wine, but that hint of bitterness gets better sip after sip. 

 

The craft

 

  • Hand-harvested.

  • Direct pressing.

  • 12-hour maceration.

  • Aging on fine lees in steel vats.

  • 12.5% ABV.

  • Lifespan: 5 years.

 

The occasion

 

Pairs well with fish, grilled cuttlefish with herbs, white meats or simply on its own for l’apéritif. 

 

The winemaker

Richard Dal Canto

Richard Dal Canto was born on a farm that was not cultivating vines and he studied law.  Winemaking didn't look like it was on the cards for him, but somehow he began his career in wine cooperative management (wine producers banding together and pooling resources to improve winemaking, marketing, and distribution) and proceeded to teach himself to make wine.  

Once he took over the family farm in 2000, it was only a matter of time until he bought plots of fallow vines on a well-exposed local terroir in a preserved natural environment capable of producing excellent wines. This was in 2002 and his mission ever since has been to produce wine in the most natural way possible both in the vineyard and in the cellar - wines of great originality while remaining accessible.
