Sauvage is a blend of Syrah (95%) and Muscat d'Alexandrie (5%), two aromatic varieties that make this wine very expressive. Muscat d'Alexandrie may be discreet here, but it plays an essential role in smoothing the texture of the wine and bringing a distinct freshness that Syrah alone can rarely express. Sauvage firmly belongs to the category of well-made natural wines: close to the fruit, but without the funkiness that might put off those who prefer a cleaner taste. The winemaking behind this is very impressive.

 

The Craft

 

  • Destemmed grapes

  • Spontaneous fermentation

  • 20-day maceration in concrete vats

  • 12-month aging in old oak casks

  • 14% ABV

 

The Occasion

 

This is a pretty versatile wine. It's fruity and fresh enough to be enjoyed as an apéritif, but strong enough to go with food. Open the bottle an hour in advance and see where it takes you.

 

The winemaker

Manuel & Hélène Rémon

Stepping away from the industrial reputation Languedoc wines earned throughout the 19th and 20th centuries, Hélène and Manuel Rémon (the fifth generation of winemakers at Domaine la Rune) embrace an artisanal approach devoted to preserving their terroir. Organic farming, eco-friendly buildings, and agroforestry: their thirst for exploration is matched only by their devotion to the land and their exceptional mastery of natural wines. This is minimal intervention at its finest.
